Tap the white software home button at the bottom of the display until you see Google Assistant appear. Next, tap the three gray dots at the top right of the pop-up box, then Settings, then "Adjust settings for this Pixel device." From there, tap Assistant Language, go to Language Preferences and select Add a Language. From there, you'll be prompted to select a language and dialect (Français and Canada, for example) that you want for Google Assistant.
