We test a lot of pillows. The eco-friendly Birch Organic stood out because it's both naturally breathable (our lead tester described it as 'remarkably cool') and comfortable for most sleep styles. That includes side sleepers — it's already plush but the shredded latex fill can be plumped to your exact needs.
Latex is an increasingly popular pillow material but it's going to take something special to topple the Birch Organic. It's pricey but in our opinion, the luxury feel and premium materials make it worth the money. (And now is the time to buy, thanks to the sale).

The Organic pillow is from eco-friendly bedding brand Birch. Our testers have previously been impressed with Birch beds — they compare to some of the best mattresses we've tested, even — so we were eager to give the pillow a go.
At the core of the Birch Organic Pillow is shredded organic latex foam. This gives the pillow its plumpness as well as support, and helps with temperature regulation (latex is known for its natural breathability which enhances air flow).
Surrounding the latex core is a layer of wool. This adds more cushioning and, yes, even more breathability. Wool is naturally moisture wicking, to keep you fresh.
Finally, it's all wrapped in a cotton cover. (Organic, of course.)
Why it's our favorite latex pillow
We've tested a fair few latex pillows over the years. So what makes the Birch Organic Latex pillow stand out?
There are three features that earned the Birch 4.5 stars from our tester.
First, the breathability. After a night on the Birch Pillow our tester described feeling 'refreshed'. She slept cool even during a warm spring.
Second, the all-round comfort. The Birch is a bit of a 'Goldilocks', a pillow that's just right for almost everyone. It's also super easy to plump and flatten, which means you can change the feel to match your needs.
Third, it feels luxurious. This isn't a cheap pillow but the good news is that the build quality reflects the higher price tag. Our only complaint was that you have to hand wash the cover.
