The usual rule is to allow 1.5lbs of turkey per person to have generous portions on Thanksgiving itself as well as some leftovers.

The smallest fryers, around 25-30 quarts, can handle a 16-18lb turkey. This is around the average size of a turkey, and all most people need - if you follow the 1.5 rule, an 18lb turkey will feed at least 10 people.

If you're having a larger gathering, you need a 30-35 quart fryer. These can cook larger turkeys up to around 20-22lbs, which is great for a crowd.

Tom's Guide news editor Alyse Stanley always deep fries her Thanksgiving turkey, and she has a few great tips for safely frying your turkey.

The first, if you turkey is frozen, is to ensure that it's fully thawed before you fry it. This is a crucial step, and it can be a huge fire risk. Alyse explains "If your turkey is still frozen when you lower it into the fryer, that extra water can cause the oil to furiously bubble and spill over, which can result in a fire."

To get around this, Alyse says, "The rule of thumb is to allow 24 hours of fridge time for every 5 pounds of turkey", and to pat down the bird before you lower it into the fryer.

Alyse adds that it's crucial to work out the amount of oil you need ahead of time. She says "Use just enough oil that it barely covers the turkey after it's lowered into the fryer", as otherwise you're creating a fire risk.

On top of that, make sure you fry the turkey away from the house to prevent fires and burns. Always fry a turkey on a flat, fireproof surface like concrete slabs, not something flammable like a wooden deck or grass.
