Home Built Computer with E6700 at 3.6ghz, 2g memory and AIO x1900 Video card (which had three video out dvi, rgb and rca) running xppro.

I'd like to set this up (all wire) at my Liquor stores So that my clerk can monitor it in store and I can monitor it remotely . I know very little about networking although i had managed to set up a wired and wireless network at home using XPpro consist of one PC, two laptops and a printer two years ago. Here are some of my questions:

1) Is it possible that I can view it with IPview software from the remote computer(provided that I installed ipview software to the remote computer) so I can watch up to 8 cameras at a time remotely?
2) Can I use two monitors at the Liquor location(4 cameras for each monitor)
3) Is there any way I can completely Overtake my onsite computer remotely (see what it sees, have complete access to it, working on it like i'am there.)
