Will buy first SmartPhone. Since I will need assistance as a somewhat technically challenged senior, want to get a Samsung Galaxy since my daughter has one and can assist me. I want to stay with Consumer Cellular but they do not offer a Samsung at present. They say can use own phone if GSM unlocked. Would I be able to use the Galaxy?

Yes, Samsung Galaxy series do have GSM phones, look for an unlocked phone that is listed as being for AT&T, T-Mobile, MetroPCS and such. A Verizon or Sprint phone won't work for you.
