Which type of fitbit is best for someone who is aready very active but wants to track the details?

Probably the One, as it seems to display the most information. It's just unfortunate that you can't wear it as a wrist band. The Flex also appears to be a solid option, but it doesn't display information directly, which can be annoying if you want to check your statistics without using a phone or PC.
