Recovering Data from a DVD

I need help recovering data from dvd.
I need an application that can recover the data off the disc.
What are some good ones in your opinion.
At the moment it doesn't matter about the type of dvd; +r, -r, +rw, -rw... as I haven't "lost" the data yet, confused?
I'll explain.
I want to write video footage onto the disc.
Then I want to delete video footage off the disc, then write images and files over the top so the video becomes somewhat "corrupt" and infused but still recoverable and "usable" to an extant.

What disc type would be the best to try this with?
Also is this achievable without being a data recovery expert?

I am doing this for an experimental film piece.

It has to be a +/- RW disc because the +/- R discs are write once discs. In other words once you write to a +/- R disc and finalize the disc you can't write anything else to it. With the +/- RW disc you can add/delete files to/from the disc. When you say write you do mean copy video files to the disc vs. burning a playable DVD, correct? If you copy and then delete the video footage and then overwrite the deleted footage with images and files the possibility of recovering the deleted video footage is greatly diminished if not impossible. Overwritten files are extremely difficult to recover.
