How does HDTV work with old movies/broadcasts

What is the process by which old movies are broadcast in HDTV, and how much
of a difference would you see with 2 sets side by side watching the same
program, one in HD and the other in SD?

It depends on the quality of the source material and how it has been
processed.

It also depends on the TV itself. I've seen some that do a great job and
other that look horrible. Make sure you check it out on the set you plan to
buy before you spend the $$$.
