Do you mean (for example) that the iPad keyboard inserts some other letter between "t" and "h" when you type the word "the"?
Or with the keyboard just sitting there, letters appear in the text?
Are the random letters a letter near the key that you did type?
Any patterns - e.g., just certain letters appear? Any particular app or apps involved?
Bluetooth connectivity? Any other nearby BT devices?
