GTX 1080 or GTX 1070

Would a GTX 1070 do fine for tripple monitors or I should with a GTX 1080?( don't need 144 HZ, 60 to 75 HZ should do fine). The second ?, Will Windows 10 play nice if use old GPU to drive the main display? Thinking of going with a 1 over 3 setup, were the main/daily driver gets the 21:9 monitor, while the games get the 3 1080p 24" Asus monitors. Please&thanks

You don't need more GPU power to drive more monitors. So the 1070 would be fine.
You don't need to use a second display to power the first monitor.

Incorrect Belphegore.
You are rendering more pixels, and therefore more stress/load is put on the graphics card.
Get the GTX 1080 if you are driving 3x 1080p displays.
You won't be able to use your old graphics card as a separate card for one particular display, it usually results in Windows freaking out. ^.^
I suppose it would be possible with AMD crossfire, but no chance with Nvidia i'm afraid.
