My motherboard doesn't have any optical audio ports but my headset (SteelSeries H Wireless) has that hub/transmitter thing and there are some there and I wish to use them. Is there any way for me to use 7.1 surround sound, like is there an adapter or something I could use or nah?
Could I use dolby 7.1 surround sound?

An adapter won't help you since the PC will be outputting stereo from the headset port.
You can buy a sound card with optical out though, and for a 5.1 instead of a 7.1 card, you can get it pretty cheap http
