I was tinkering around my macbook pro 2011 and I accidently pulled off the little wire from its "head" the little golden clip.

Do I need to replace the entire display assembly? I think that wire comes from the display. Now WiFI and ethernet both do not work after pulling the cable.

Do you still have the head? Maybe you can reattach. That wire runs around the edge of the LCD and to replace it requires removing the glass screen. Can be done but likely the screen will get cracked and you will need to replace that too. If you cannot reattach the head I would suggest getting a USB wireless adapter and use that instead. Not sure why the ethernet was affected, that is odd.

I've disassembled Macbooks fully before. Do you know what the cable is called so I can order a replacement?

as long as the connectors are on the wires then push them in onto the connectors on that circuit board as that is your wireless card. the connectors on the wires will look like the 3 that are in the bottom left picture of your post.
