Soundbar for TV receiving Slingbox feed via HDMI and coaxial out only

I have an LG 65LB5200 which I use to watch FIOS via Slingbox. The Slingbox is connected to a FIOS box at a different location, and I use my laptop to receive the remote feed. I've been able to use an HDMI cable to get the remote Slingbox feed (video and audio) from my laptop to the TV without any problems. The TV does not have optical out, but it does have a coaxial out.

My question is whether I can use a soundbar with this setup. I'm currently looking at the LG LAS551H, which has HDMI and digital audio/optical (TOSLINK) inputs. If I use a coaxial to optical converter, will I be able to get the audio feed to the soundbar? I understand that ideally, I would connect the FIOS box directly to a soundbar, but that's not an option. I'm also interested in hooking up an Xbox or Playstation at some point, which I think would use the same setup: console to TV via HDMI, TV to soundbar using a coaxial to optical converter.

Simplified version:

FIOS Box connected to Slingbox M1
Laptop receives Slingbox feed via wifi
Laptop is plugged into TV via HDMI
Would TV's coaxial output --> coaxial to optical converter --> soundbar's optical input work?

You can connect your TV to that soundbar with a coax to optical converter.
You can also connect your laptop to that soundbar with HDMI and connect the soundbar to the TV with HDMI. Either should work but the first option will be better if you add additional sources to the setup.
