I currently have a Samsung Blue Ray player modelHT-BD1250 that has speaker output connectors, a total of 10 speaker wires. How can I convert those wires to operate a new player that only has phono jack capabilities

The speaker wires will require an amplifier. If the new player only has RCA jacks for output it has no built in amplifier. The note on the Samsung says the speakers are 3 Ohm. You need a multi-channel amp that can handle low impedance. The cost of an amp is probably more than a new integrated 5.1 speaker system.

The Samsung you mention is generically known as a HiTB (home theater in a box).
If you want to use the main unit with other speakers that have plugs on them rather than bare wire connectors you would need to either add these connectors to the speaker end of the wire or modify the speaker to accept bare wire.
If you want to use the speakers from the Samsung with a different main unit that has plugs for speakers to connect to it you would need to add those connectors to speaker wire or use the wires that came with the unit and cut off the plugs at the speaker end.
