Microsoft Word formatting help

Hello, I would be more specific with my title but I don't know how to describe in short so I included a video so I could show my problem....well two problems actually

On the first part you could see that when I write something, text on the other side moves too, which wouldn't be that much of a problem because I can return it but as you can see, it may happen that the text under doesn't start at the same place. Is there any way to lock the text so it doesn't move when I write?

On the second part, I just can't get text to start typing on the line, it either starts writing much above the line on somewhere else but I want to get it on the line.
 
On the first part: Don't use spaces, use tab stops to position "Occupation", "Nationality" etc titles. Enable ruler view, then click on the ruler to place a tab stop. Then, use TAB key to move there, and type "Occupation". Now, when you type the name, "Occupation" will not move
