I bought a G74SX (I5-2410M) back in 2011 only recently I've looked into upgrading it.
So I bought a 8gb stick of memory and once installed the system wouldn't boot.

After reading the specifications further I can only conclude that the I7 version of the laptop comes with 4x ports for memory and the i5 only comes with 2x ports.
So that limits me to 4gb sticks in each slots and gives me a total of 8gb instead of the currently installed 6gb.

Just curious if that really is the case.

Yup, that seems to be the case.

"2 x SO-DIMM socket for expansion up to 8 G SDRAM (Dual Core)" is what it says on the product specs page, so 2 x 4GB is your max.
