It is totally possible to do it. The question is why would you want to set up a RAID configuration? This is only justified if you are using, for example, uncompressed video data that needs extremely high write speed. Otherwise, you won't even notice the difference if you use your SSDs separately or in a RAID configuration.
It is really not worth it to put them in an array because they are fast enough used separately.

I personally would put a very fast HDD in that caddy, if you want a really fast system. But RAID-ing 2 SSDs is really not very cost-effective and it wouldn't really make a lot of difference.

I apologize for the late response!
For example, I personally like WD Black - it's all about performance. It is specifically designed for high-end applications and gaming. I recommend it because I use a lot of Adobe applications and graphic design programs and the performance improvement is definitely noticeable. If you are into gaming and high speed, it runs at 7200 RPM, has 16 MB cache and has up to 750 GB capacity choice (on the 2.5" mobile version)

If you are into something more ordinary with solid performance and reliability. The WD Blue drives are also a good choice with up to 1 TB capacity and 5400 RPM.
