I just moved in an apartment and noticed there are 4 speakers installed in the ceiling. There are 8 outputs installed in the wall with 2 per speaker. Front left/right, back left/right. They don't fit the typical 3.5mm or red/white audio cables... any ideas what types of cable I would need to get this hooked up? I asked the local electronics stores and they haven't seen this type of set up. any help is appreciated.

A stereo 3.5mm to y cable plug banana 4mm(left/right) would give you stereo. No clue if they make them. Really though it would be an easy thing to change out, and repair before moving out. I'm assuming the speakers aren't powered so you need an amp anyways. You might be able to find a cheap used receiver at a thrift store that has the input for your phone but you will still need speakers wire out to the plug in. Or just remove the plate and run with standard speaker wire(18 gauge, lamp wire is cheap).

Hard to to tell from the picture but they could be 2.5mm(guessing 4 mm) or not. Banana plugs come in different sizes, the most common size is 4mm. I have installed similar outputs but you could replace them. I wouldn't though since they seem of decent quality.

Got a ruler?

I measured and it's 4mm. Unfortunately, I can't touch the set up since I'm acrenting. WIthout a receiver, would I only be able to use 1 speaker if I were to get a banana plug to 3.5mm headphone jack adapter if I wanted to play music off my phone?

Those connectors will take bare wire. They are thumbscrews as well as banana plugs. You unscrew them counter-clockwise and stick the wire under the screw, or there may be a hole in the shaft.

You will need something like this, if your player has enough power to drive them. If not you will need an amplifier.

Just cut off one end and carefully strip off about 6 inches or so of the outer covering. You will have either 3 wires or 2 wires and a bunch of small wires (the shield) wrapped around them.

Two wires are the left and right and the shield or third wire is common to the two. If it is a shield, just split it in half and twist the wires together to hook to the black tagged speakers you want to use. If you want to hook them all up, just connect the shield to all 4. then strip about 1/2 inch from the left and right, and hook them to the speakers you want to use.

In that case you would just need a standard audio cable (3.5mm to 2xRCA) from your source and plain wire for the speaker connection.
