Can I run programs not installed on my boot drive?

If I were to install MS Office for example onto my HDD but run it from my SSD which would be my boot drive, will it work?

Would the program just install everything onto the HDD and create a launch icon on my SSD? Or do I just need to do that manually?

Trying to decide whether or not to get a big SSD since it costs more.

Yes, you can install on any drive you want.

However, except for games, you may find you don't need to. I have a 128GB SSD, and with the OS and ALL applications, it is currently ~50GB used space.
MSOffice 2013, Lightroom, Corel Video Studio, Paintshop Pro, a whole bunch of other stuff.

Applications don't really take that much space. Music/pictures/video are what take a lot. And games of course.
