As far as I can tell, the only difference between these two models is drive setup (mSATA + HDD vs just HDD) and my questions are:

-would it be safe to assume the one that comes without an mSATA drive has an unoccupied mSATA port? Where can I find out for sure?

-if question one is possible, would moving over the OS be as simple as imaging it? (I don't know any good imaging programs, please recommend)

-if questions one and two are possible, would it automatically boot from the mSATA, or would I have to manually switch the boot drive in the BIOS?

Thanks for your replies

To answer a couple of your questions, yes there will actaully be 2 unpopulated mSATA port if there are no SSD's preinstalled. I have only ever used Clonezilla to clone hard drives, and it has worked for me every time (except for when the hard drive was faulty). You would likely have to change some bios settings, but that is relatively easy. I believe Linus Tech Tips did a full tutorial on how to configure an SSD boot drive.
