I have a Samsung tv with 3 inputs (cable/dvd/googletv) I would like to add a projector. I know I need a splitter/reciever for the visual inputs but what about the sound. Where will my soundbar plug into to allow tv volume and then switch to projector when i switch? Many thanks

You already said your solution. A decent receiver with 2x HMDI outputs will allow for custom audio setups. A capable receiver will also have 5-7 HDMI inputs so you should be set.
If you're planning on using the soundbar for projector audio in addition to TV audio that's super easy. If not, you'll just need to setup dual audio zones in the receiver. This will allow you run both sets of speakers simultaneously as well as have separate unique audio and video sources feeding the projector and tv.
